Fish tacos. This is a really delicious recipe. As with most recipes from the central American region not much is know about the origin. There is one school of thought that says that the taco is from the 18th Century. The story goes that the word taco is a reference to the small charges from the silver mines in Mexico.

The charges are called Tacos and it’s these that are blown to extract Silver ore from the ground. The miners used to eat tacos and they then became miners tacos.

However, the taco predates the Spanish landing in the 1500s. In 1518 a guy going by the name of Bernal Diaz del Castillo documents the first taco meal enjoyed by Europeans. Which predate the discovery of dynamite by nearly 350 years.

Regardless of this tacos are very enjoyable! These days tacos are filled with all sorts of meat, fish and vegetables. The taco shell can be fried or not and can be a flour or corn tortilla!

Fish Tacos

In Mexico tacos with different fillings are called different names. The Mexican name of this taco is Taco de Pescado which means fish taco.

Ture to tradition I use a blue flour corn tortilla and top the taco with pico de gallo, sour cream and lettuce. I also use feta cheese. Feta cheese is the closest cheese I can get to a Cojita cheese, which is a Mexican cheese made from cows milk, although it has a strong resemblance to feta which is made from goats cheese.

Of course, don’t have to make the blue corn tortilla’s. (you can actually buy some good quality 100% white corn tortilla in the supermarkets!) I do strongly recommend that you do even just for the flavor’s sake. Not to mention making your own means leaving out all of the additives that you find in them.

Fis Taco Recipe

For this recipe you will need the following ingredients;

  • 8 Blue corn tortilla (or any other small tortillas that you may have)
  • Plaice fillets 4 should be plenty for 2 people (you can ask your fishmongers to fillet it for you)
  • 1 teaspoon of ground paprika
  • 1 teaspoon of ground cumin
  • Bunch of coriander
  • The zest and juice of 1 lime
  • A Large red chilli
  • A fresh crisp Iceberg Lettuce shredded.
  • A tablespoon of olive oil
  • feta cheese
  • Extra lime to serve

First, we need to make a marinade for our fish taco take a large glass bowl and using a zester, zest the lime into the bowl.

Once you have zested the lime cut it in half and squeeze all of the lime juice into your glass bowl.

Next, you need to take the skin off of the fish. So, taking your fish fillets, cut into the flesh at one end making sure you do this with a very Sharpe knife. Taking care not to cut through the skin. hold the piece of skin that you have cut. Place your knife at a 45-degree angle into where you have made you cut gentle see-saw your knife while pulling the skin towards you.

Take the bunch of coriander and finely cut the stalks. Only cut the stalks u to were the leaves of the coriander starts.

Add in your olive oil, mix well and place aside.

Next you need to take the skin off of the fish. So, taking your plaice fillets, cut into the flesh at one end making sure you do this with a very Sharpe knife. Taking care not to cut through the skin. hold the piece of skin that you have cut.

The skin should come away in one piece leaving you with a skinless fish fillet. Repeat with all the plaice fillets.

Check that there are no bones in the fish fillets and cut into strips 1cm wide and place these into your bowl with your fish taco marinade. Coat all of the fish strips in the marinade and chill in the fridge for at least 1 hour.

Once you have decided that you fish has marinated for long enough. Take a frying pan and place over medium heat. add in a small amount of olive oil and add your fish and pour in the marinade. This will reduce and increase the delicious flavour!

Pan-fry for about 10 minutes taking care now to break the fish up and allow the marinade to reduce.

Once your fish has cooked transfer to a heatproof dish. Here’s the fun part! It’s now time to build your fish tacos!

First, take your taco shell or small tortilla, add in the shredded lettuce and spoon in a generous amount of your fish.

Next top with some feta cheese and add some pico de gallo. Serve with freshly cut lime wedges and enjoy an authentic taste of Mexico!
