No-bake cheesecake. This is my go-to cheesecake, it’s really simple quick and is also egg-free! This was something I once made for a dinner party and they went down a treat! This recipe is the exact same recipe as I made for this dinner party and are individual. feel free to use the same method in a larger pan in which you can slice the no-bake cheesecake into slices. It is much easier and less time consuming to do them this way but the trade off is they don’t look as nice!

If you do decide to make them this way. a handy tip is to go to the hardware store and buy a drain pipe. cut sections about 50mm high and these will be perfect moulds! They are also much cheaper than buying baking moulds and this will save you a small fortune!

My no-bake cheesecake recipe is a classic flavour pairing of vanilla white chocolate and blueberries and it is as delicious as it sounds!

No-bake Cheesecake Recipe

You can use digestive biscuits for the base, however, my almond shortbread is superb for this recipe!

For this no-bake cheesecake recipe you will need the following ingredients;

  • 8 almond shortbread biscuits. Or 8 digestive biscuits
  • 75 grams of butter
  • 200 ml of double cream
  • 150 grams of cream cheese
  • 200 grams of white chocolate
  • 1 punnet of fresh blueberries
  • vanilla pod (optional)

I brought white chocolate with vanilla seeds in it, however, if you don’t have this then you can always add a vanilla pod into the mix to get the same flavou

Start by crushing up the almond shortbread, or your digestive biscuits into fine crumbs. Thes easiest way to do this is with a food processor. If you don’t have one them roll up your sleeves and use a rolling pin! Blend until the the crumbs are very fine.

Next, melt the butter in a saucepan over low heat, once your butter has melted add in your biscuit crumbs and combine well.

place acetate sheets inside your moulds. (this will make life much easier later on!) Make sure the acetate is long enough to completely cover the inside of the mould.

Spoon the butter and biscuit mixture into each of the molds. About a table spoon in each of your moulds is plenty. Gently press the mixture down into the mold to compact it. Once all of your mould are filled and, place into the fridge to set. this should take about an hour.

While the bases are setting in the fridge, break up your chocolate in a large bowl and melt it over a pan of hot water. You need the chocolate melted but still cool. 

Make sure the chocolate is cool, melted and not hot!

 Once you have done this, add in your cream cheese and combine well. Make sure the chocolate is cool if it isn’t there is a real possibility that the chocolate will split the cheese and you will need to start again!

In a separate bowl whish your double cream into soft peaks, don’t overwork it as you can add ‘stiffness’ once you combine the cream cheese and the white chocolate.

Combine the cream cheese and chocolate mixture with the whipped cream. Transfer to a piping bag and pipe the no-bake cheesecake mix into your mould moulds. 

Place your no-bake cheesecakes back into the fridge to set for about an hour.

Once the hour is up, remove the no-bake cheesecakes from the fridge. Un-mould them and pipe the remaining cheesecake mix on top, decorate with blueberries!

That all there is to them! Oh except to enjoy them! These really are fabulous little cheesecakes and you really should make them!
